Hand crafted, washed rind cow's milk cheese that combines the traits of Swiss Gouda and Appenzeller. Delicately aged on cedar wood planks robust flavors to the cheese. Creamy and rich, with sweeter overtones and distinctive eyes throughout the body of the cheese. All of the milk used comes from the Gunn's Hill family dairy farm.
